COLEMAN NATURAL
ROAST LAMB PROVINCAL
Ingredients
- 7 to 9 pound Leg of Lamb
- (8) Cloves of Garlic
- 1 Tablespoon Salt
- 1/2 Tablespoon Pepper
- 2 Tablespoons Dried Lavender
- 1 teaspoon Fried Thyme
- 1 Carrot, cut into 6 pieces
- 1 Yellow Onion
- 1 stalk Celery
Procedure
- Preheat oven to 450 degrees.
- Make 8 incisions around the leg of Lamb and insert cloves of garlic into them.
- Combine dry spices and herbs and rub over entire roast and place in a large roasting pan
that has been lightly oiled.
- Surround roast with vegetables and place in oven. Immediately reduce heat to 350 degrees
and roast for about 3 hours.
- Remove from oven and let rest for 20 minutes before carving. While roast is resting,
deglaze pan with red wine and add ½ cup of chicken broth to prepare sauce for roast.
