COLEMAN NATURAL ROAST LAMB PROVINCAL

Procedure

  1. Preheat oven to 450 degrees.
  2. Make 8 incisions around the leg of Lamb and insert cloves of garlic into them.
  3. Combine dry spices and herbs and rub over entire roast and place in a large roasting pan that has been lightly oiled.
  4. Surround roast with vegetables and place in oven. Immediately reduce heat to 350 degrees and roast for about 3 hours.
  5. Remove from oven and let rest for 20 minutes before carving. While roast is resting, deglaze pan with red wine and add ½ cup of chicken broth to prepare sauce for roast.
