STIR-FRY TRI TIPS IN LETTUCE CUPS

Cut the beef across the grain into1/2-inch slices. In a small bowl, combine the lime juice, soy and hoisin sauce, sesame oil and the garlic. Add the beef, and marinate for 20 minutes in the refrigerator. Strain the marinade from the beef.

Place a 10-inch skillet over high heat. When hot, add the peanut oil and stir-fry the beef until cooked. Do not overcook!

Put a portion of the beef in a lettuce cup. Top with additional hoisin sauce and thinly sliced green onions, if desired. Roll like a burrito.  Serves 3-4

Serve the Tri Tip burrito with fried rice and steamed vegetables.
