Cut incisions at even intervals on both surfaces of the meat and insert slices of garlic. Combine mustard and seasoned pepper and spread over all sides of the roast. Let stand in refrigerator for 1 hour.

Add water to roasting pan and cover roast with a tent of foil. Roast in a 350'F oven for approximately 1- 1 1/2 hours or until a meat thermometer reads 135'-145'F. Combine sauce ingredients. Slice meat thinly and serve with sauce. Makes 6 servings. Prep Time: 2 hours.
